The year was 1970. The year I was born into the restaurant biz. My parents, Bill and Jean VanGilder purchased what was then called the Lake Naomi Motor Lodge in 1968 in Pocono Pines. Soon, my parents converted the small coffee shop into what is now VanGilder's Jubilee Restaurant. Early-on, in the 70's The Jubilee became popular for unique breakfast and home style meals. The Jubilee today still remains a family business, run now by the 2nd generation, in it's 53rd year of business! If you are ever in the Pocono Region of Pennsylvania, stop by and say hello! I started working at The Jubilee as a bus-girl, and moved through every position the restaurant had- and soon found myself as a Line-Cook at the age of 15. Over the years, I have worked priding myself in offering unique foods. My sisters, along with my brother worked together expanding the business, taking The Jubilee food booth to Pocono Wing Off- and overtaking People's Choice for many years, and our popularity of serving good food grew and grew. Our family has personally managed and promoted our restaurant with love and hard-work. As years passed, I wanted to take my interest in food and love of travel and music to another level. With my love for the Grateful Dead following them since 1985 and frequent travels to festivals, my personal interest in running a food booth began.
My love for wood-fired pizza began in 2001 at The Rothbury Music festival where a company Fire Within was selling wood-fired pizzas next door. I fell in love! While it's been 19 years...I finally launched the food booth: I'll Meet you At The Jubilee in 2009. Finally, through much thought I pursued the wood-fire pizza dream and went to pizzaiola training during the Pandemic of 2020. Alas...I have plunged forward in building a custom wood-fired pizza oven!
And so my journey continues, serving up the best pizza with the best ingredients!
