We create a one of a kind, hand crafted pizza party for your event. Our wood fired oven is specialty built to cook wood fired pizzas at your location. The oven is designed to heat to 900 degrees and cooks the perfectly light Neapolitan style pizza. Our oven is capable of cooking up to 4 12" pizzas at one time to keep up with any size crowd.
I was trained by wood-fired Neapolitan experts. There are specific "musts" in cooking this type of pizza. The best ingredients: ONLY Stanislaus tomatoes imported from Italy and low-moisture, whole milk Grande cheese make up the Neapolitan pizza. This type of pizza was designed in Naples to be eaten as a single serving for one person with a knife and fork; hence the 12-13 inch pizza size. Neapolitan pizza is largely defined by its pillowy, chewy crust. Baked at 700 to 1000° F for 60 to 90 seconds, its crust has dark charred spots and carries a remarkable flavor owing to its highly refined double 00 flour base. This is NOT the New York Style pizza you may be looking for- it is it's own type of pizza using specific ingredients, a wood fired oven, and a trained pizziolo/a.
Our set up requires a 15 by 20 foot level area consisting of our oven and front serving tables so there is good accessibility for your guests.
Plan for one hour of set up prior to the event’s start time, two hours of continual wood fired cooking of our pizzas, specialty dishes and salads, followed by one-half hour for clean-up.
